The friends we are staying with know how to make beautiful food. Tonight we're eating 'in' and having chicken that was 'breaded' with chunks of fresh coconut, then simmered in a spicy curry sauce. Rice and Greek salad round out the meal and make us feel very welcome indeed. For now, we're enjoying ourselves and moving slowly, definitely on Mexico time.
