The meat from last night's leftover chicken went into tortillas, becoming enchiladas in sauce. There's cheese and onion in the rest of the roll-ups in the pan.
The Dear Man prepared some jalapeno peppers -- some of them just baked in oil, but another batch stuffed with ricotta cheese and baked in the same as sauce the enchiladas.
Salad, for what it's worth is chopped up lettuce accompanied by some freshly made guacamole. Ole!
