Three...eggy omelet

As year end (and blog-end) approaches, I'm doing my best to use things up. A small bunch of green onions is still in the fridge, unused and hanging about from the Christmas Eve meatball fest. To my eye, they're the start of an omelet.

Along with three eggs (I'm hungry!) and a bit of cheese, supper is ready in no time. Salad on the side makes it perfect.

Green Eggs ’n Ham

When my kids were little, if I had a bit of ham around, I’d chop up the meat and cook it into scrambled eggs with a bit of green dye. Today, that would probably get me a fine for trying to poison them. They had lots of fun eating it and haven’t yet turned green.

Tonight’s version is much more a grown-up one – poached eggs on top of spinach, with some ham popped under it, just for a nice firm base.

Maybe not as fun as the original, inspired-by-Dr.Seuss-version, still, I’m smiling.

Not quite Julia


After seeing an old rerun of Julia Child's cooking show, I got inspired to try making some real omelettes -- not my usual poor excuse of scrambled eggs with peppers or mushrooms cooked in. The fact that we had a few fresh chanterelles to put into them seemed like a clear go-ahead.

Once I'd started cooking the mushrooms, I discovered we only had two eggs, not the four I'd had in mind as waiting in the carton. Still, I was committed, so pulled out some additions to make the meal work.

Because this has been an outdoors kind of day (sunny and beautiful!), I knew that appetites would be big, so I also cooked a few slices of bacon and some pre-made broccoli bites. Sliced tomato and avocado worked just fine as a salad. And in the end, though I don't quite have the knack of Julia's wrist action with the skillet, I think this supper worked out just fine.

Clearing out the fridge

We're flying back east tomorrow to spend some time with family. So tonight's a night for clearing out what's in the fridge.

A salad and sort of a fritatta -- using most of the vegies and doing a good job towards the end of the box of eggs. A smidget of ham, last night's potatoes, some baby zucchini from the front yard garden. The salad has the last nudge of blue cheese and even a few leftover kidney beans. Not much in the way of fresh goods will be left to hand over to our pal who's driving us to the airport!
